Some Like It Haut

At the end of November, we kicked off this series of no-holds-barred dinners with a remarkable tour de France of the 1980s. Herbfarm chef Keith Luce conjured marvels to marry to our stellar cast: 1985 Krug Champagne, 1985 Bonneau du Martray Corton-Charlemagne, 1989 Comte Georges de Vogüé Musigny Vieilles Vignes, 1989 Chave Hermitage, 1982 Château Mouton (100 points), 1988 Château d’Yquem (“the most profound since the legendary and a host of all-80s delights. It was an extraordinary evening and a sell out. Souvenir menu and tasting notes, 28 pages in all, $25.
Gilded Butterflies

Return to an age of luxury, an era of Strauss waltzes, fur hats, and gilt. This is an evening where great and unctuous “dessert-style” wines will rule the table, paired as they are, in the late 19th-century fashion, to every course in a cascading fantasia of pleasure. Swoon to Jacques Selosse Demi-Sec “Exquise,” ‘01 Chateau Rieussec (100 points), 1880 Chambers Rare Rutherglen Muscat (100 points), 1947 Gaston Huet Vouvray “Le Haut Lieu” Möelleux (“the greatest white wine ever made”—Joseph Bastianich), and other equally lavish and extraordinary elixirs. One evening. A lifetime of memories. $1100
